Irish Tea Bread

- INGREDIENTS -
1 cup hot black tea (strongly brewed)
1 cup mixed dried fruit (raisins, currants, sultanas)
1 ½ cups self-rising flour
½ cup brown sugar
1 large egg
½ tsp ground cinnamon
¼ tsp nutmeg
A pinch of salt



- METHOD -
Soak the dried fruit in hot tea overnight or for at least 4 hours.
Preheat oven to 350°F (175°C). Grease and line a loaf tin.
In a bowl, mix the flour, sugar, spices, and salt.
Stir in the soaked fruit (with remaining tea) and the beaten egg until combined.
Pour into the prepared tin and bake for 60–70 minutes, or until a skewer comes out clean.
Cool on a wire rack, slice thickly, and serve with butter and a warm cup of tea.

Chocolate Ganache Torte

- INGREDIENTS -
1 cup dark chocolate chips
½ cup heavy cream
1 tbsp butter
1 prepared chocolate crust
Cocoa powder for dusting
½ tsp vanilla extract
1 tbsp powdered sugar (for a silkier sweetness)
A pinch of sea salt (to enhance the chocolate flavor)



- METHOD -
Warm cream in a saucepan until just simmering,
Pour over chocolate chips and let sit briefly.
Add butter and vanilla, stirring until smooth and glossy.
Spread ganache evenly into the prepared crust.
Chill for 2 hours or until firm.
Dust with cocoa powder and serve.
